Book of traditional Gagauzian dishes to be published in southern city of Moldova

Chisinau, 03 September /MOLDPRES/ – The Gagauz – Yeri authorities will publish a Gagauz cookbook. The volume is elaborated by the Scientific Research Centre (CSC) of autonomy and it is expected to see the light of the pattern in 2020, with reference to regional press.   

According to the head of CSC, Irina Constantinova, the recipes and other materials for this book are accumulated from the households in the region, in particular, from the elderly which know the original preparation technologies. Later, the stored info will be processed according to a common concept of the traditional Gagauz cuisine.

“This book will include cold and hot dishes, sweets and desserts, spirits and non – alcoholic drinks, baked goods and snacks, characteristic of traditional Gagauz cuisine. All the material will be arranged beautifully, with a detailed description of preparation of each piece separately. It is a serious, meticulous work, which is why editing the book will take longer”, said Irina Constantinova, quoted by gagauzinfo.md.

The quoted source said that the layout of the work is to be presented by the end of 2019, and the book will already be available to readers by 2020.  

The national cuisine of Gagauzia has evolved over centuries and it shows mainly the life of the people in the steppe area. Gagauzians prepare over 100 dishes. The originality of the Gagauz cuisine consists mainly in the choice of certain goods, spices and use of technologies, characteristic only to this people. Most of the Gagauzian households prefer to add in red pepper paste, which gives the dishes a special taste. On the holiday table in Gagauzia you can find kaurma, bulgur, salma, ghezlemea, baur, kaimakli, snacks from sweet peppers, tomatoes, eggplants, nuts and cheese, etc.
